Since they are raw, they are full of live enzymes, a great source of fat, antioxidants and make a great energizing snack.
Your family, friends, guests, will love this decadent treat (which was proven this past weekend when I served them at two parties)! The recipe below is vegan, paleo, gluten-free, and very easy to make!

Ingredients
Inside of balls:
1 cup dates, soaked
1 cup dates, soaked
1 cup walnuts, raw
1/2 cup shredded coconut, inside of balls
2 tbs raw cacao
2 tbs raw cacao
1/2 tbs coconut oil*
1/2 tsp vanilla bean powder (or 1 tsp vanilla extract)
Dash of salt
1/2 tsp vanilla bean powder (or 1 tsp vanilla extract)
Dash of salt
Outside of balls:
1/4 - 1/2 cup shredded coconut, outside of balls
1/4 - 1/2 cup shredded coconut, outside of balls
*The coconut oil is used to make the balls a bit most so that the coconut on the outside will stick on easier.
Instructions
- Fully cover dates with water in a bowl and soak for 10 minutes.
- Add all ingredients, except dates and extra coconut for outside of balls, to food processor, grind up until course.
- Turn off food processor.
- Discard water dates soaked in.
- Add dates to food processor and process until mixture sticks together (to tell if it sticks together, test out the mix by trying to make a baby ball).
- If too dry, add water starting with a 1/4 tsp until consistency achieved. If too wet, add more coconut starting with an 1/8 cup.
- Roll mix into bite size balls.
- Pour shredded coconut for outside of the balls onto a plate and roll balls around until fully covered.
- Refrigerate for at least 30 minutes, then serve.
- Store refrigerated in an airtight container.
