Chocolate Chip Date Super Bar


By special request, I was asked to put this recipe up. I made these at Julian’s 100km fundraising event, and have also made it for my friends at work who test out my treats on a regular basis (which is one of the many things I love them for). This recipe was adapted from various other recipes, but I added a little power to it with the super foods :) It is really easy to make and if you don’t have any of the super foods, they are totally optional. However, I do recommend spending the extra money on at least a couple super foods since putting them in makes it a fuel packed pre-workout snack or a healthier treat for kids (and adults) vs. the processed crap desserts. Equipment Needed:
Food Processor
Cookie Sheet
Parchment Paper
Freezer or Dehydrator

Makes approximately 20 bars

Ingredients:
1 cup chopped dates (i use medjool)
1 cup walnuts
½ cup raw almonds
½ cup raw cashews
¼ cup flax seeds
4 tbs goji berries
2 tbs hemp seed
2 tbs maca powder
3 tsp vanilla extract
3 tsp water
¼ cup unsweetened coconut
1/3 cup vegan chocolate chips/chocolate chips or carob chips


Directions:
  1. Place chopped dates, walnuts, almonds, cashews, flax seeds, goji berries, hemp seed, maca powder, and vanilla extract into food processor.
  2. Blend ingredients in food processor. While blending, add the water, followed by the coconut. Blend until everything broken up well. 
  3. Transfer mixture into a separate bowl. Add in chocolate chips and mix with hands.
  4. Press dough into parchment lined pan into ½ inch thickness. It may not reach the edges, but that is totally fine.
  5. Chill for at least 30 minutes in the freezer before cutting. Store in freezer (because it tastes way better cold).
  6. If dehydrating, transfer to dehydrator for 8 hours at 115 degrees, and cut when done. Can be left at room temperature after dehydrated.
